Astăzi voi deschide sertarul cu Ponturi din bucataria MamaChef și aș vrea să îți propun o discuție despre un aliment extrem de îndrăgit, mai ales de copii, dar și de majoritatea mămicilor
Pentru că din experiența mea de mamă, dar și din poveștile multor altor mămici, pastele pot să își poarte cu mândrie renumele de ”Cel mai iubit fel de mâncare al copiilor ”. Asta pentru că de cele mai multe ori când intrebi un copil ce isi doreste să manance, raspunsul este de obicei - Paste, mami!
Fie că sunt cu unt, cu parmezan, cu sos roșu sau chiar și simple, indiferent de formă sau mărime, cei mici, inclusiv micii mofturoși, ar putea să le consume oricât de des, fără a obiecta.
Deși destul de dezbătute atunci când vine vorba despre dieta adulților, în ceea ce privește dieta copiilor,se pare că pastele sunt considerate a fi recomandate spre consum.
OMS (Organizația Mondială a Sănătății) recomandă asigurarea pentru copii a unei diete echilibrate, care să conțină și carbohidrați, iar pastele, mai ales cele din grâu integral, sunt o bună alegere în acest sens. Iată câteva dintre beneficiile consumului de paste:
* pastele conțin fibre. Fibrele ajută la reglarea zahărului din sânge, la prevenirea supra-alimentării (oferind senzația de sațietate) și sunt benefice pentru sănătatea intestinelor. Pastele integrale sunt un depozit și mai bogat de fibre, de aceea se recomandă consumarea cu precădere a acestui tip de paste. Ca exemplu, un bol de spaghete integrale conține cu 60% mai multe fibre decât același bol, dar cu spaghete obișnuite, cele rafinate.
* pastele aduc organismului un aport important de carbohidrați, ceea ce înseamnă susținerea energiei celor mici. Carbohidrații furnizează glucoză, care alimentează creierul și mușchii. De altfel, pastele sunt o sursă bună de carbohidrați complecși, oferind o eliberare lentă de energie.
* nu în ultimul rând, pastele sunt un depozit de nutrienți importanți : vitamina B9 (folat), fier, magneziu sau seleniu se găsesc în paste.
Dacă ești fan paste sau părintele unui mare fan al pastelor, trebuie să excelezi în prepararea lor. De aceea, m-am gândit că ți-ar fi utile câteva trucuri, pe care le folosesc și eu atunci cînd vreau sa prepar paste ca la carte :
1. Se pare că un prim aspect extrem de important este cantitatea de apă și sare folosite la fierbere.
Există și o formulă în acest sens care te poate ajuta:
- la o cantitate de 450 gr paste este necesară o cantitate de aproximativ 4 litri de apă și 1 lingură de supă de sare de masă. Dacă folosești sare Kosher se poate mări cantitatea la 1 lingură și jumătate.
La o prima vedere pare multă apă, dar prin fierbere pastele elimină o cantitate însemnată de amidon. Dacă nu este suficientă cantitatea de apă în care fierb, amidonul va îngroșa apa, iar pastele vor deveni lipicioase.
În ceea privește cantitatea de sare, acesta este necesară pentru a săra pastele propriu-zis, fiind singura dată când pastele pot fi sărate, iar cea mai mare parte din sare va rămâne în apa de fiert și se va elimina prin scurgerea pastelor.
2. Importanta este si forma pastei. Alege forma pastei în funcție de sosul pe care îl folosești!
- dacă gătești cu sos mai subțire care are la baza ulei de măsline sau roșii, este indicat sa folosești pastele subțiri și lungi (spaghetele și cele de genul acestora), deoarece sosul va acoperi uniform pasta.
- în schimb, dacă ai pregătit un sos gros (cu carne sau bucăți de legume) ideale sunt pastele mai groase, tubulare (pene, pene rigate, fusili) deoarece forma lor în relief ajută ca sosul sa se lipească de paste.
- sosurile cremoase sunt ideale pentru pastele lungi și late (ca tagliatelle).
3. Un aspect crucial pentru a găti paste perfecte este timpul de gătire. Gătește întotdeauna pastele al dente!
Se știe ca pastele extragătite nu sunt tocmai sănătoase, de aceea este important să le gătești exact cât trebuie. Dacă te întrebi ”Cum știi când pasta e perfect gătită?” este foarte simplu.
Atunci când vezi că timpul de fierbere recomandat pe ambalaj este spre final cu (aprox -1 - 2 minute înainte), scoți o bucată de pastă și ai două modalități de a verifica:
- fie o strivești cu o furculiță pe o farfurie. Dacă interiorul este alb făinos, înseamna ca pastele mai trebuie gătite.
- sau poți gusta pasta: dacă are textura gumoasa și tare, necesiăa fierbere, dacă este doar fermă înseamnă că este gata, iar dacă este excesiv de moale, este prea fiartă.
Ca principiu, pastele lungi și subțiri se gătesc mai repede decât cele scurte și mai grose.
Important privind timpul de gătire este și modul în care servești pastele. Dacă le servești cu sos este important să reduci timpul de fierbere cu 2-3 minute, deoarece veți adăugă pastele direct în sosul fierbinte, și niciodată sosul peste paste, ceea ce va face ca acestea să absoarbă aromele sosului și, totodată, să continue să se gătească.
4. Un alt pont este să amesteci pastele în primele minute după ce le adaugi în apă.
De ce? Pentru ca amidonul se eliberează în apă în primele minute de gătire, ceea ce poate cauza lipirea pastelor. De aceea, este bine să amesteci pastele la începutul fierberii, după care le lăși să se gătească liniștite.
Deși ai fi tentată să adăugați ulei pentru a preveni lipirea lor, nu este o ideea bună, deoarece uleiul va împiedica ulterior aderarea sosului pe paste, și astfel, sosul va rămâne în farfurie.
5. Urmatorul punct cheie este să strecori pastele imediat după fierbere.
Deși ai închis focul, pastele se gătesc în continuare în apa fierbinte, devenind prea moi. De aceea, este necesar să le scoți imediat din apa fierbinte.

7. Un ultim truc este să gătești pastele la sfârșit. Fie gătești paste cu sos, cu ulei de măsline sau o salată de paste, toate celelalte ingrediente trebuiesc să fie gata, iar pastele le prepari la urmă pentru ca atunci când le scoți din apa să le poți adăuga imediat peste restul ingredientelor.
